Bolognese
Bolognese
A rich and flavorful Bolognese sauce made with bacon, vegetables, ground meat, red wine, and cream. Perfectly simmered for depth and served with your favorite pasta and parmesan.
Yield: 8 people
Materials
- 1 pack of bacon
- 2-3 large onions
- 5 cloves of garlic
- 6 large carrots
- 6 stalks of celery
- 500 g ground beef
- 500 g ground veal and pork mix
- 140 g tomato paste
- 3 dl red wine
- 3 cans of crushed tomatoes
- 1/4 l cream
- Salt and pepper
- Pasta of your choice
- Parmesan cheese
Instructions
- Fry the bacon until it is golden and crispy.
- Meanwhile, finely chop the onions, carrots, celery, and garlic.
- Transfer the bacon to a bowl lined with kitchen paper to absorb the excess fat.
- Let the vegetables sauté in the leftover bacon fat on the pan for about 10 minutes.
- Add the ground meat and cook until browned.
- Mix in the tomato paste with the meat and let it fry for about a minute.
- Pour in the red wine and let it reduce for 5-10 minutes.
- Return the bacon to the pot along with the crushed tomatoes.
- Let the sauce simmer for at least 1-2 hours, but preferably much longer.
- Finally, add the cream and season with salt and pepper to taste.
- Serve with your favorite pasta and a generous amount of parmesan cheese.
