Bolognese

A rich and flavorful Bolognese sauce made with bacon, vegetables, ground meat, red wine, and cream. Perfectly simmered for depth and served with your favorite pasta and parmesan.

Materials

  • 1 pack of bacon
  • 2-3 large onions
  • 5 cloves of garlic
  • 6 large carrots
  • 6 stalks of celery
  • 500 g ground beef
  • 500 g ground veal and pork mix
  • 140 g tomato paste
  • 3 dl red wine
  • 3 cans of crushed tomatoes
  • 1/4 l cream
  • Salt and pepper
  • Pasta of your choice
  • Parmesan cheese

Instructions

  • Fry the bacon until it is golden and crispy.
  • Meanwhile, finely chop the onions, carrots, celery, and garlic.
  • Transfer the bacon to a bowl lined with kitchen paper to absorb the excess fat.
  • Let the vegetables sauté in the leftover bacon fat on the pan for about 10 minutes.
  • Add the ground meat and cook until browned.
  • Mix in the tomato paste with the meat and let it fry for about a minute.
  • Pour in the red wine and let it reduce for 5-10 minutes.
  • Return the bacon to the pot along with the crushed tomatoes.
  • Let the sauce simmer for at least 1-2 hours, but preferably much longer.
  • Finally, add the cream and season with salt and pepper to taste.
  • Serve with your favorite pasta and a generous amount of parmesan cheese.
